i'm using plain eclipse i.e. no sloeber plugin and no gnu mcu eclipse etc.
i found this plugin really nice

it gives you quick access to the peripheral registers and when connected using gdb, to look at the peripheral registers values, double click on the register in embsysregview.
that makes an environment quite close to the commercial IDEs
